Today I have a super simple, super delicious breakfast recipe for you that also happens to be an incredibly nourishing skin food: Creamy Vanilla Porridge with Almonds and Blueberries.

Almonds as a beauty food

Did you know that snacking on almonds can improve the health of your skin, hair, and nails? Almonds are rich in zinc and B vitamins (niacin and riboflavin), and just one handful of almonds (28g) contains 60% of the recommended daily amount of vitamin E, which can protect cells from oxidative stress caused by pollutants, UV radiation, cigarette smoke, and other environmental factors. Oxidative stress occurs in the body when more free radicals – chemical compounds that can damage our body cells – are produced than can be neutralized. An overload of oxidative stress can accelerate skin aging, but can also lead to chronic inflammation and other diseases. That’s why it is so important to not only care for the skin from the outside in, but also ensure that the skin is fortified and nourished from the inside out.

I eat approximately one handful of almonds (28 g) every day – mostly as a snack. Whether on their own or combined with fresh or dried fruit, they’re just so good! They contain protein, unsaturated fatty acids, and fiber, which all help keep you full until the next meal. I also love adding almonds to all kinds of sweet and savory dishes.

Radiant skin with a nourishing breakfast

My Creamy Vanilla Porridge with Almonds and Blueberries is the perfect breakfast for radiant skin. Oats are rich in biotin, zinc, and copper, all of which are good for skin, hair, and nails.

Blueberries are loaded with antioxidants (the substances that neutralize free radicals). This makes them highly anti-inflammatory. Just like oat flakes, blueberries contain a lot of fiber, which is important for a healthy gut biome.

I also sprinkle Ceylon cinnamon on my porridge, as it also contains antioxidants and has an anti-inflammatory effect.

Raw cacao is also rich in antioxidants – regular consumption can delay skin aging.

Creamy Vanilla Porridge with Almonds and Blueberries

  • 300 ml almond milk*
  • 60 g oat flakes*
  • 1 generous pinch vanilla or 1/2 tsp pure vanilla extract
  • 100 g blueberries
  • 40 g almonds
  • 4 tbsp almond butter*
  • 1 tbsp raw cacao* or defatted cocoa powder
  • 1/2 tsp Ceylon cinnamon*
  1. Boil the almond milk in a small pot, add oat flakes, and simmer for about 3–4 minutes, stirring occasionally. Stir in vanilla.
  2. Wash and sort blueberries. Divide the blueberries into two equal piles, and then slice the blueberries from one pile in half. Coarsely chop almonds. Mix two tbsp. almond butter with cacao powder.
  3. Divide porridge into two bowls. Top with blueberries, almonds, white almond butter, almond-cacao mix, and cinnamon.
