PROMOTION Hello my dears! As part of the survey for my blog’s anniversary, many readers wrote in requesting that I post weekly meal plans. But before I’d even posted the survey, I’d already done a cooperation with the American Sweet Potato Marketing Institute: seven delicious recipes, all of which feature sweet potatoes, of course! At the end of this post you’ll find a downloadable PDF with all of the recipes plus a shopping list.

Sweet potatoes are not only delicious, but also super healthy: they’re full of antioxidants, which protect against heart disease and stroke; have a low glycemic index, which means they keep blood sugar levels stable; and are rich in dietary fiber, which keeps you full. They’re also one of the top three sources of potassium. 

Monday: My first recipe is for a Sweet Potato Coconut Soup with ginger, garlic, chili, and coriander – perfect for autumn and super quick and easy to make!

Tuesday: The next recipe is also super quick to make: Sweet Potato Toast with Puréed Peas, Pomegranate Seeds, and Feta Cheese. The puréed pieces can easily be replaced by guacamole (or simply mashed avocado). To make the “toast,” simply cut slice sweet potato lengthwise into thin slices and toast 2–3 time at the highest setting for approximately two minutes each until sweet potatoes are soft and slightly browned. It’s hard to imagine that sweet potatoes can be prepped this way – but believe me, it works! :-)

Wednesday: Here we have a gorgeous and nourishing Buddha Bowl with Sweet Potato Hummus. Quickly to make, delicious, and satisfying – the perfect dinner!

Thursday: For today’s recipe – Sweet Potato “Pasta” with Broccoli, Chili Peppers, and Cauliflower Alfredo Sauce – you’ll ideally have a spiralizer. If you don’t have one, just chop the sweet potatoes into bite-sized pieces.

Friday: Comfort food: a delicious Sweet Potato Risotto with Braised Cherry Tomatoes! Mine is made with vegetable stock only, but of course you can add white wine to make a more classic risotto.

Saturday: Next on the menu is the super quick Sautéed Sweet Potatoes with Beetroot and Walnuts – the perfect autumn meal!

Sunday: The last recipe is one of my favorites: Mashed Sweet Potatoes with Braised Cherry Tomatoes! Braised cherry tomatoes are so good that I’ve included them in these recipes twice – I’m sure you’ll love them, too!
