The next recipe in my little “Healthy BBQ” series is for Zucchini Rolls with Mediterranean Filling. I just love them! The raw zucchini is simply cut into thin strips, then filled with a mixture of soft cheese, sun-dried tomatoes, arugula, and pine nuts. Roll up the zucchini strips and fix with a skewer – done!

The Zucchini Rolls can be made in a snap and are a perfect appetizer for BBQs – but they’ve also proven themselves as ideal on-the-go snacks as well! Here’s the recipe:

Zucchini Rolls with Mediterranean Filling

  • 1 Zucchini
  • 1 handful arugula
  • 20 g pine nuts
  • 80 g dried tomatoes* in oil
  • 175 g cream cheese or soft goat cheese
  • salt*
  • pepper*
  1. Wash zucchini, remove ends, and cut lengthwise into fine strips with a V slicer or mandoline.
  2. Wash arugula and pat dry. Dry roast pine nuts (no oil) in a non-stick pan. Purée with sun-dried tomatoes, soft cheese, and arugula. Season with salt and pepper and set aside.
  3. Lay out zucchini strips and spoon 1–2 tbsp of cheese filling at the beginning of each strip. Carefully roll zucchini and pin with a bamboo skewer or toothpick.
