Hello my dears! First off, I’d like to thank you for all your feedback on my last article “Nutritional Supplements: My Opinion | Nutrient Deficiencies” I never expected such a huge response. I’ll keep you updated on what’s going on with me!

Meanwhile, I’ve got a new popsicle recipe for you today: Coconut Water Popsicles with Seasonal Fruit. The “recipe” is so simple that you hardly even need one! But since the popsicles are so unbelievably light, refreshing, and hydrating, I just couldn’t resist sharing. :-) They’re also really pretty (as you can see from the pics).

To make the popsicles, I added some colorful, seasonal chopped fruits (blueberries, pineapple, strawberries, and kiwi) to these popsicle molds.* I also put a little granola (the Chocolate Coconut Granola from my book Zuckerfrei Backen) into the molds – completely optional!

Coconut Water Popsicles with Fruit

Passive Time 4 hours
  • 160 g seasonal fruits
  • 480 ml coconut water
  1. Wash fruit, cut into small pieces, and fill eight ice popsicle molds as pictured. Fill up with coconut water.
  2. Insert a wooden stick into each mold and freeze for at least 4 hours.
  3. To serve, dip molds briefly in hot water and remove the popsicle.
