As you’re all aware, we’re right in the middle of strawberry and rhubarb season – and combining the two for a perfect union of sweet and tart is a total springtime classic! Feeling inspired, I topped today’s Overnight Oats with a beautiful Strawberry Rhubarb Compote – sugar-free, of course.

Some of you may already be familiar with the recipe for my Pumpkin Waffles with Cranberry Compote, which I posted here on the blog last winter. I sweetened the cranberry compote with some rice syrup – fresh cranberries are super sour and kind of unpalatable without any added sweetener.

Strawberries are a different story, however, and will likely be sweet enough for you if you’ve been eating less sugar for a while now. But if you’re just starting to reduce your sugar consumption, you might want to add a couple tablespoons of rice syrup.

Overnight Oats with Strawberry Rhubarb Compote

  • 100 g whole-grain oats*
  • 250 ml oat milk
  • 500 g strawberries
  • 2 stalks rhubarb
  • 1 generous pinch ground vanilla* or 1/2 tsp pure vanilla extract
  • 1-2 tbsp rice syrup* optional
  1. In a bowl, combine oats and oat milk. Divide into two bowls and refrigerate overnight or for at least 30 minutes.
  2. Wash strawberries, remove stems, and chop. Wash rhubarb, remove ends, and chop.
  3. In a saucepan, bring strawberries, rhubarb, and ground vanilla to a boil with 2 to 4 tablespoons of water. Simmer for 2–3 minutes, stirring occasionally. Add rice syrup if necessary.
  4. Pour the compote (warm or cooled) over overnight oats.

It’s easy to double or triple the Strawberry Rhubarb Compote recipe to store in the fridge for a few days, or freeze. You can prep the compote the night before, then enjoy it cooled with the Overnight Oats, or prepare in warm in the morning. Just before serving, I also topped my Overnight Oats with Strawberry Rhubarb Compote with chopped pistachios, pumpkin seeds, and dried mulberries.
