I was having a craving for eggplant, quinoa, pomegranate, and dates – so I brought them all together for a Middle Eastern-inspired recipe that fits perfectly into Phase 2 of the Sugar-Free Challenge: Roasted Eggplant with Date Almond Quinoa and Minted Coconut-Milk Yogurt. (If you omit the dates, it’s also compliant with Phase 1!)

I love this combo! It’s a perfect combination of textures and flavors, creamy and fragrant and even a bit tart (from the pomegranates) and smoky. It’s also super easy to make!

Roasted Eggplant with Date Almond Quinoa and Minted Coconut-Milk Yogurt

  • 2 eggplants
  • 3 tbsp olive oil*
  • salt*
  • 1 onion
  • 2 garlic cloves
  • 4 dates dried and pitted
  • 40 g almonds
  • pepper*
  • 100 g Quinoa*
  • 1/2 pomegranate
  • 150 g coconut yogurt
  • 1/2 bunch mint
  • 2 tbsp sliced almonds
  1. Preheat oven to 200°C (top and bottom heat). Wash eggplants and halve lengthwise. Hollow out halves with a tablespoon, leaving a rim of roughly 0.5 cm. Place eggplant halves on a baking tray lined with baking paper, coat with two tbsp olive oil and sprinkle with salt. Bake for 25 minutes in preheated oven.
  2. Cook quinoa in 300 ml water for about 15 minutes.
  3. Prep ingredients for the filling: finely chop scooped out eggplant flesh, peel and finely dice onion and garlic, chop dates and whole almonds (leave sliced almonds aside).
  4. Heat 1 tbsp olive oil in a pan and sauté eggplant, onions, garlic, dates, and chopped almonds (leave sliced almond aside) over medium heat for about 2–3 minutes. Season with salt and pepper. Fold in cooked quinoa.
  5. Remove seeds from pomegranate. Pluck and wash mint leaves. Fill eggplant halves with sautéed mixture. Top with yogurt and sprinkle with pomegranate seeds, sliced almonds, and mint.
