At every one of my workshops, someone will always ask: “How long does the Chia Jam stay fresh?” I tell them that I wouldn’t keep it in the fridge for more than 2–3 days.

Really? But jam made with gelling sugar lasts to eternity and back! That this healthy alternative only keeps for a few days is kind of a downer for all of us jam fans who eat clean.

Fortunately, I’ve found a solution: Chia Jam can be frozen! And since you’ll likely only need a small amount at a given time, we portion the jam into ice cube trays.* The jam “cubes” can then be taken out and thawed as needed. Sure, you can’t prepare huge quantities of jam with this method (unless you have a massive freezer or tons of ice cube trays lying around). But at least you can enjoy some fresh healthy jam whenever the craving hits without having to whip it up from scratch. Enjoy!

  • 250 g strawberries or raspberries
  • 2 tbsp chia seeds *
  • 1 generous pinch ground vanilla* or 1/2 pure vanilla extract
  • 1 generous pinch Tonka bean powder
  1. Wash and purée berries. Stir in chia seeds and round vanilla and let sit for 10 minutes.
  2. Spoon chia-berry mixture into ice cube trays and let set in the freezer. Remove and let thaw as needed.
