Just this week I tried out a Strawberry Coconut Oatmeal breakfast bowl – and it was so good that I just had to share the recipe! My husband also adores this oatmeal. It’s super easy to make and wonderfully summery.

Ever since I started working on my book Coconut Cooking last year, I’ve been trying to track down coconut shell bowls (which you can see here in the photos). Last weekend, when I was in Cologne giving two of my Clean Eating Basics workshops, I just happened to stumble upon them by chance! Aren’t they awesome? (Hint: you can find them online here.*)

This oatmeal can be eaten hot or cold as Overnight Oats – feel free to prep it the night before and stick it in the fridge overnight to enjoy in the morning.

Strawberry Coconut Oatmeal

ZUTATEN:
  • 400 ml coconut milk
  • 80 g whole-grain oat flakes
  • 250 g strawberries
  • 4 tbsp shredded coconut*
  • 4 tbsp cacao nibs*
  • 4 tbsp puffed quinoa*
ANLEITUNG:
  1. Bring coconut milk to a boil in a small saucepan. Add oats and let simmer for about 10 minutes.
  2. Wash strawberries and remove stems. Purée 200 g or strawberries; slice remaining strawberries into thin slices.
  3. Mix 100 g of puréed strawberries into oatmeal and divide into two bowls. Pour remaining strawberry purée over oatmeal.
  4. Slice remaining 50 g of strawberries. garnish oatmeal with sliced strawberries, shredded coconut, cacao nibs, and puffed quinoa.
