Strawberry season is upon us, and I have to admit, I’ve got some serious strawberry fever. I’m sure most of you are feeling the same! At the moment, these summer berries are showing up on my menu every single day, whether unadorned, puréed into my Strawberry Coconut Oatmeal, or – in freeze-dried form – rolled up into my Strawberry Cashew Energy Balls, the recipe of which I’m pleased to share with you today.

These flavorful, summer-sweet energy balls are perfect for summer and are quick and easy to make – which is ideal for me at the moment, since I’ve had a lot going on! I’ve been busy giving workshops (my own cooking courses plus blogger workshops) and working on many other projects, which is why things have been quieter than usual on the blog. You’ll be reading more about all of that soon here and in the newsletter (in German only). In the meantime, here’s the recipe:

Strawberry Cashew Energy Balls

Prep Time 15 minutes

Passive Time
  • 20 g freeze-dried strawberries*
  • 350 g dates
  • 250 g cashews*
  • 50 g grated coconut*
  1. Process all ingredients into a paste using a high-speed blender.*
  2. With clean hands, form roughly 30 energy balls from the mixture. Store in the fridge.
