A few months ago, my dear friend Franzi posted a recipe on Gemüseregal that I just had to make: a Savory Breakfast Salad!

I know it might sound a little odd, but you wouldn’t believe how many letters I get asking for savory breakfast recipes. During the Sugar-Free Challenge, I actually posted three of these recipes:

Because this salad is made with apples, raisins, and orange juice (which serves as a dressing), it’s not a completely “savory” salad; at the same time, it’s not really a dinner salad, either. It works great for summer and autumn – it’s so light! :-)

 

And here’s the recipe:

Recipe: Savory Breakfast Salad

ZUTATEN:
  • 1/2 head napa (Chinese) cabbage approx. 300 g
  • 1 stalk celery
  • 1 apple approx. 120 g
  • 40 g walnuts
  • 20 g raisins
  • 1 blood orange
ANLEITUNG:
  1. Wash napa cabbage and slice into thin strips. Wash celery stalk, cut off ends, and remove stringy fibers with a knife.
  2. Wash, dry, core, and quarter apple and cut into pieces. Coarsely chop walnuts.
  3. Combine napa cabbage, celery, and apple and divide onto two plates. Top with walnuts and raisins.
  4. Halve and juice orange, pour juice over salad.
