Today I’m happy to share another recipe for a snack that’s tasty, healthy, and super quick to prepare and fits perfectly into Project: Sugar-Free and the Clean Eating concept: Roasted Chickpeas. In addition to vegetable proteins, chickpeas are rich in dietary fiber, which fills you up without weighing you down. Roasted chickpeas are also a great alternative to chips and other fatty or salty snacks.

The beauty of this recipe is that you can easily adapt it to suit your preferences just by swapping out different spices – paprika and curry powder also work well here, for example.

  • 200 g chickpeas cooked
  • 2 tbsp olive oil*
  • 1 tsp thyme* dried
  • 1 tsp Oregano* dried
  • 1 pinch salt*
  • pepper*
  1. Preheat oven to 175°C (over and under heat setting) and drain chickpeas.
  2. Mix all ingredients in a bowl, spread out over a baking tray lined with baking paper, and bake for 30 minutes in preheated oven. Turn baking tray every so often to ensure even roasting.

Store roasted chickpeas in a jar, where they will keep fresh for several days.
