Thyme is currently one of my favorite autumn herbs, and I couldn’t resist adding it to the Onion Tart I baked last week. It came out great – we’ll certainly be having it again. Try it with a glass of Federweisser! 

Onion Tart with Thyme

  • 4 red onion
  • 6 tbsp olive oil*
  • pepper*
  • thyme* dried or fresh!
  • 400 g spelt flour
  • 1 tbsp baking powsder
  • 200 g low-fat quark or Greek yogurt
  • 200 g sour cream or smetana
  1. Preheat oven to 220°C (top and bottom heat). Peel and slice onions.
  2. Heat olive oil in a pan and sauté onions for a few minutes. Season with pepper.
  3. Wash thyme, dry, and coarsely chop. Sauté briefly with the onions.
  4. Using a dough hook, work spelt flour, baking powder, quark, olive oil, and 8 tbsp water into a dough.
  5. Line a baking tray with baking paper and roll out dough.
  6. Spread sour cream over dough and top with thyme-onion mixture.
  7. Bake in preheated oven for about 20 minutes.
