I spent this past weekend in downtown Hamburg with my sister, where we discovered a small shop in the Europa Passage selling tons of different cookie cutters. When I spotted this little Buddha model,* it was immediately clear: he’s coming home with me! I hadn’t even been planning on making cookies, but fortunately I had everything I needed for these Matcha Christmas Cookies just hanging around in my kitchen – which meant that I could get started with the baking right away. These came out great and were quickly devoured!

Matcha Christmas Cookies

  • 1 tbsp Matcha*
  • 1 generous pinch ground vanilla* or 1/2 tsp pure vanilla extract
  • 200 g spelt flour
  • 100 g Butter or non-dairy substitute
  • 2 egg yolks
  • 50 g Kokosblütenzucker*
  1. Mix all ingredients to form a uniform dough.
  2. Preheat oven to 180°C (top and bottom heat).
  3. Roll dough and cut out cookies.
  4. Bake in preheated oven for 10 minutes.
