The recipe I’m sharing with you today is relatively simple, but totally brilliant: Toast with Cream Cheese, Sautéed Onions, and Fig Jam. It came out so great that I actually ended up making it three times in one week! That my husband also loved it was a huge plus: it’s one of my most important criteria for a good recipe! (The others, for those of you who are new here, are that it has to taste great, contribute to a healthy body, and take less than 30 minutes to prepare.)

The best thing about this recipe is that the fig jam is completely free of sugar (apart from the natural fructose in the figs). It pairs beautifully with soft goat cheese, but since my husband isn’t a fan, I use cow’s milk soft cheese on our toasts. The toasts are perfect when topped with fresh thyme; you can even add chopped walnuts.

By the way, the whole-grain toast slices in the pics are from Alnatura. Just toast them briefly and smear on the toppings. Heavenly!

The bread is my signature bread, which I made with my very own bread seasoning. I always keep a few slices in my freezer – when you toast it, it tastes fresh-baked! :-)

Toast with Cream Cheese, Sautéed Onions, and Fig Jam

  • 4 fresh figs
  • 1 pinch salt*
  • 2 tsp lemon juice
  • 2 onions
  • 1 tbsp olive oil*
  • 4 sprigs thyme*
  • 2 slices bread
  • 50 g cream cheese or soft goat cheese
  1. Make the fig jam: remove tough fig stems and slice flesh into pieces.
  2. Boil approx. 200 ml water and add salt, lemon juice, and sliced figs. Let simmer for about 15 minutes. Purée and let cool.
  3. Peel and slice onions. Heat the oil in a pan and sauté onions with fresh thyme over medium heat for about 5 minutes.
  4. Toast sliced rolls, then layer on spreadable cheese and fig jam. Top with onions, thyme, and walnuts.
